Shoutoku was founded in 1645 in Kyoto. During its long history of 370 years, the company has become part of the cultural fabric of Kyoto. Shoutoku is striving to drive a resurgence in the popularity of Junmai-shu, which as the company puts it "represents Japanese sake as nature intended - just rice, koji (rice mold) and water". In recent years, the company has strengthened its relationship with local farmers, which means that Shoutoku can source rice for sake from one distinct locale. Shoutoku sake is made using traditional techniques and has a unique aroma married to a high-class, smooth taste evocative of the city of Kyoto.
